Happy Mardi Gras!!! The day before Ash Wednesday is known by many names: Mardi Gras, Carnival, Shrove Tuesday, Fat Tuesday, and, like in my house, Pancake Day! Pancakes and pastries are traditional foods to make for Fat Tuesday. Medieval Christians had to use up all of their eggs, butter and milk which were forbidden during lent. I personally love any holiday that centers around pancakes!!! When I was growing up, my mother served pancakes for dinner on Fat Tuesday and I am more than happy to carry on that tradition!!!
We mixed things up a bit this year at our house. We traded our usual round pancakes, for Mickey Mouse shapped waffles. Our kid’s first trip to Disney World (and their first plane ride!) is coming right up, so we have Disney on the brain! I whipped our my Mickey Mouse waffle maker that is at least 20 years old, and got to work.
I LOVE Bob’s Red Mill Gluten Free Pancake Mix. I just follow the direction (plus 1/2 tsp vanilla extract) and they turn out perfect every time. The whole family loves them. No one would ever guess they were gluten free. Since it is Fat Tuesday, and we were being a little glutenous, we ran out of mix before our bellies were full. So I improvised by making blueberry waffles out of Trader Joe’s blueberry muffin mix. Again, I followed the directions for muffins, and just threw the batter in the waffle iron. I was so happy how well they turned out. My hubby and kids loved them!
