Coconut Oil Fudge
Coconut oil has been described as “the healthiest oil on earth.” What makes it different from all other oils, especially other saturated fats?
The difference is in the fat molecule. All fats and oils are composed of molecules called fatty acids. Coconut oil is composed predominately of medium-chain fatty acids (MCFA), also known as medium-chain triglycerides (MCT). MCFA do not have a negative effect on cholesterol and help to protect against heart disease. MCFA help to lower the risk of both atherosclerosis and heart disease. It is primarily due to the MCFA in coconut oil that makes it so special and so beneficial. If you google “health benefits of coconut oil” you will see dozens of medical uses for coconut oil too!
There are only a very few good dietary sources of MCFA. By far the best sources are from coconut and palm kernel oils. I have replaced all the vegetable oils in my kitchen with coconut oil with great results! If you do not want the coconut taste, buy the refined coconut oil.
My favorite cooking blog, lovesveggiesandyoga.com has a great recipe for coconut oil fudge. With just agave nectar, coconut oil and cocoa powder you can make a delicious fudge! The only thing I do different, is make a triple batch. The whole family loves it!
