I wanted to create a gluten and grain free granola recipe. I updated my 3 Seed Granola recipe, swapped the oats for coconut and voila: coconut granola! It is so decadent and delicious. I don’t even miss the oats! The coconut takes on a nice chewy texture when baked. Try it and let me know if you agree!


Ingredients


1 cup unsweetened coconut

1/4 cup ground flaxseed

1/4 cup raw pumpkin seeds

1/4 cup raw sunflower seeds

1/2 cup nut (I’ve used walnuts and sliced almonds, both were great!)

1/4 cup coconut oil

1/4 cup maple syrup

1/4 tsp cinnamon

1/4 tsp sea salt

1/2 tsp vanilla extract


Instructions


Melt the coconut oil if it is not already soft.

Stir the maple syrup and coconut oil together.

Add the sea, cinnamon and vanilla. Stir to combine.

Add the rest of the ingredients and stir to combine.

Bake at 300 degrees for 30 min or until done. Stir every 8 minutes to avoid burning the coconut!

Store in an airtight container. Feel free to add dried fruit at this point!
